Our flagship wine. These grapes were planted and grown with the intention of creating this wine, and it is a reflection of the volcanic soil our of organic-farmed estate. Vinified in our classic CDC practice: open-air fermentation, basket-pressed directly into the barrel, where it matures on lees for 18 months and is racked once before bottling. All CDC wines receive no intervention or additives of any kind, including no added sulfites.
This wine is starting to display classic CDC aromas of blackfruit, rasperries and spice, with a palate of tart cherry and earthiness. A strong acidity, firm tannins and good structure provide the necessary legs for this wine to age beautifully for many years to come.
