Côte des Cailloux Syrah-Whites 2018
Estate-grown Syrah with a small percentage of mixed whites (Marsanne, Roussane, Viognier), 15.4% ABV
The mixed whites (Marsanne, Roussanne and Viognier) share their Rhône origins with our estate-grown Syrah, and lighten its intense character to add a nice floor to the wine. The result is elegantly aromatic, displaying a fruity nose of black cherry, cassis and black pepper, along with a full-bodied palate characterized by good astringency, acid, salinity and a medium-to-long finish. All of these factors allow for great aging potential in this wine; drink now or cellar for up to 5 years.
The vinification of this wine follows classic CDC practices: open-air fermentation, basket pressed directly into the barrel, where the wine matures for 18 months undisturbed on lees, is racked once and then bottled. CDC wines don't receive any additives or undergo any filtration or fining during the winemaking or bottling process.
